Writers and bar stools have been inseparable for generations, especially when there are good cocktails involved. The cocktail culture is thriving at our boutique hotel in Palm Springs, thanks to the creative concoctions of bartender Antonio Martinez. A craft cocktail genius, Antonio infuses a sense of place into every drink. On our 13-acre Parker Palm Springs Estate, there are 130 citrus trees, including lemons, oranges, pomelos and nectarines along with two pink grapefruit trees and even a key lime tree. Whether Antonio is reinventing a classic with a surprise twist or being inspired by these surroundings to create a new drink, the spirit of the Parker is in every sip.
Here, the sweets are not so sweet, and the sours are not so sour. While Antonio loves all his drinks, there are a few cocktails of which he is especially proud. “One of my favorites is the Passion Fruit Rickey,” he says. This gin-based cocktail with a blend of dill and fruit is distinctive and yet somehow just right. “The dill is on the nose of the cocktail. It’s a tropical and light drink, perfect for the dessert sun.”
Another treat awaiting exploration is the Picante Agave, made with Casamigos Blanco Tequila. Fresno chiles with cilantro gives it a spice-forward, herbal feel. “It elevates the cocktail to a new level,” Antonio says.
Then there’s the Pharmacy cocktail. Named after the speakeasy-like space in New York, Apotheke, this drink is a riff on an espresso martini, with Braulio Amaro, legendary amaro from Italy made from a secret recipe of herbs and botanicals, with a touch of medicinal spice that speaks to the original purpose of the drink. It may be just what the doctor ordered.
And it wouldn’t be California without a cocktail that Antonio has called Golden Hour. Named for that special light that inspires photographers and cinematographers, this delicate blend of Chopin Rye Vodka, cucumber, Thai basil, lime and fino sherry combine for an unforgettably refreshing drink.
